The Bay of Cancale boasts an exceptional tidal range (12 m) and is swept by strong prevailing currents preventing pollution of the waters. The unique combination ensures that the water is constantly clean and pure.
Sampling was performed using water after the high tide period and the sampling area is classified Class A under continuous health monitoring controls (microbiological, chemical, contamination, phytoplankton, pH).
